Well, BOO HISS! I STILL have DAMN COVID!
He tested negative yesterday and I thought today I would too, but OH NO...BIG OLE' POSITIVE on that damn test strip.
I'm very sad to not get to spend the day with family but it is what it is. Plus, even though I was bummed NOT to be hosting this year like the past nearly 40 years, it was a good call that the bro-in-law and wife are hosting. Everything would have had to shift if I were hosting.
I hardly sleep last night with anticipation of testing again, so I was up early. When I saw that damn pink line this morning I already had a plan in my mind. I went to the deep freeze in the garage, dug to the bottom for the Cornish hens I knew were there. I made the mandarin-orange salad. Found the green beans, cream of mushroom soup and fried onions for green bean casserole and cornbread for some dressing. We will have a proper Thanksgiving dinner along with homemade creamed corn and leftover au gratin potatoes. I made the au gratin potatoes from scratch the other night, my first time. Last night we had sweet potato puffs I will add to some leftover roasted sweet potatoes for a small sweet potato casserole. See, we will fair quite well and are looking forward to making a meal fit for my king, on a smaller scale. Got to look at the brighter side of things. I'm glad to NOT infect delicate family members with this stupid virus. I might even drag out some Christmas, or maybe tomorrow, depending on the next test. We have another get together tomorrow, and Saturday I have a meeting I need to attend...
